Apricot Peanut Granola

  Old fashioned oats 3 Cup (48 tbs)
  Wheat germ 1⁄2 Cup (8 tbs)
  Flaked coconut 1 Cup (16 tbs)
  Oil 1⁄4 Cup (4 tbs)
  Honey 1⁄4 Cup (4 tbs)
  Peanuts 1 Cup (16 tbs)
  Dried apricots 1 1⁄2 Cup (24 tbs)
  Sunflower nuts 1⁄2 Cup (8 tbs)

Combine oats, wheat germ, and coconut in a large bowl. Heat oil and honey to just below boiling point. Pour over oat mixture, tossing to coat thoroughly. Spread mixture evenly in jelly-roll pan. Roast at 300 degrees F. for 30 minutes, stirring occasionally until mixture is lightly browned. Remove from oven; mix in with peanuts, apricots, and sunflower nuts. Cool. Store in tightly covered container.
