California Apricot Vinaigrette Salad

A light and healthy salad to enjoy during the Spring and Summer Time.
Ingredients
  Spring mix/Lettuce 1 Bag (1 kg)
  Roma tomato 1 Large, chopped
  Cucumber 1 Medium, shaved
  Carrot 1 Medium, shaved
  Dried cranberries 2 Tablespoon
  Broccoli 1 Cup (16 tbs)
  Red onion 1 Cup (16 tbs), chopped
  Tangerine 1 Medium, peeled and seperated
  Goat cheese 1 Cup (16 tbs)
  Olive oil 1 Cup (16 tbs) (Vinaigrette dressing)
  Rice wine vinegar 1 Cup (16 tbs) (Vinaigrette dressing)
  Soy sauce 1 Tablespoon (Vinaigrette dressing)
  Apricot jam 2 Tablespoon (Vinaigrette dressing)
  Fresh grated ginger 1 Teaspoon (Vinaigrette dressing)
  Kosher salt 1 Teaspoon (Vinaigrette dressing)
  Pepper 1 Teaspoon (Vinaigrette dressing)
Directions

MAKING

FOR THE VINAIGRETTE
1. In a mixing bowl pour the olive oil, rice wine vinegar, soy sauce and the apricot jam.
2. Grate in the ginger and season with salt and pepper.Whisk it all together.

FOR THE SALAD
3. In a large mixing bowl empty the spring mix, broccoli, tomato, dried cranberries, tangerine and the red onions.
4. Shave in the carrot and the cucumber.
5. Drizzle in the vinaigrette and coat all the veggies and the spring mix well.

SERVING
6. Sprinkle the goat cheese on top and serve.
