Marinated Figs And Apricots

Ingredients
  Dried black figs 8 Ounce
  Dried apricots 8 Ounce
  Orange juice 1⁄2 Cup (8 tbs)
  Lime juice 2 Tablespoon
  Vanilla extract 1⁄4 Teaspoon
  Nonfat yogurt 1⁄2 Cup (8 tbs)
  Maple syrup 1 Tablespoon
  Grated nutmeg 1⁄4 Teaspoon
  Lime rind 1 Tablespoon, grated
Directions

GETTING READY
1) Discard the stems from the rigs.

MAKING
2) In a 2-quart saucepan add rigs, apricots, orange juice, lime juice, and vanilla. Combine together.
3) Cook over simmering heat for 7 minutes until the fruit begins to plump.
4) Take off from heat.
5) Cover and refrigerate overnight.
6) In a bowl line cheesecloth and sieve yogurt through it.
7) Drain for about 2 hours until thick.
8) Put in a small bowl, add maple syrup, nutmeg, and lime rind.

SERVING
9) Serve fruit with yogurt mixture.
