Apricots supreme...a healthy, easy and quick treat. A delicious snack. You are sure not going to be able to stop at one.
Ingredients
  Boiled potatoes 6
  Bread crumbs 1⁄2 Cup (8 tbs)
  Flour 1 1⁄2 Cup (24 tbs)
  Butter 3⁄4 Tablespoon
  Powdered sugar 2 Tablespoon
  Egg 1 , beaten
  Salt 1 Pinch
  Cinnamon 1 Teaspoon
  Ripe apricots 16
Directions

GETTING READY
1) In a pot, boil water.

MAKING
2) Pass the potatoes through a ricer.
3) In a bowl, add together potatoes, flour, egg, and salt and make a stiff dough.
4) Flour a surface and roll out the dough.
5) Cut into 16 squares.
6) Deseed the apricots and wrap each in a square of dough.
7) Add into the boiling water and cook for about 10 minutes, till the apricots soften.
8) Remove.
9) In a skillet, heat butter.
10) Add in the bread crumbs and brown.
11) Coat the apricots with the crumbs.

SERVING
12) In a bowl, mix powdered sugar and cinnamon.
13) Add over apricots and serve.
