Apricot Yams

Ingredients
  Cooked yam/Sweet potatoes 6 , peeled
  Brown sugar 1 1⁄2 Cup (24 tbs)
  Cornstarch 1 1⁄2 Tablespoon
  Grated orange peel 1 Teaspoon
  Ground cinnamon 1⁄4 Teaspoon
  Apricot juice 1 Cup (16 tbs)
  Canned apricots 1 Cup (16 tbs), drained
  Butter/Margarine 3 Tablespoon
  Chopped pecans 1⁄2 Cup (8 tbs)
Directions

Cut yams in half.
Arrange in a buttered baking dish.
Combine brown sugar, cornstarch, orange peel, cinnamon and apricot juice in a saucepan.
Cook and stir until sauce thickens.
Stir in apricots, butter and pecans.
Pour apricot mixture overyams.
Bake at 375 degrees for 25 minutes, or until heated.
