Apricot Almond Delight

Ingredients
  Dried apricots 250 Gram
  Gelatin 1 Tablespoon, dissolved in 4 tablespoon hot water
  Evaporated skim milk 250 Milliliter (1 Cup)
  Caster sugar 3 Tablespoon
  Almond essence 1 Teaspoon
  Finely chopped toasted almonds 1 Tablespoon
Directions

1.Place apricots in a bowl, pour in sufficient water to cover and leave to soak overnight.
2.Drain apricots and place in a food processor or blenderwith gelatine mixture, skim milk, sugar and almond essence.
Process until smooth.
Pour into individual glasses.
Refrigerate until firm.
To serve sprinkle with almonds.
