|Cold water||1⁄2 Cup (8 tbs)|
|Unflavored gelatin||1 Ounce (1 Envelope)|
|Sugar||1⁄2 Cup (8 tbs)|
|Sweetened applesauce||2 Cup (32 tbs) (Thick Sauce)|
|Apricot preserves||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Teaspoon|
|Egg whites||2 (Unbeaten)|
1. Pour cold water into a heavy saucepan. Sprinkle gelatin over it. Stir over low heat until gelatin is dissolved.
2. Remove from heat. Add sugar and stir until dissolved..Mix in applesauce, apricot preserves, rum, and lemon juice.
3. Chill until mixture begins to gel, stirring occasionally. Blend in egg whites. Beat with electric or hand rotary beater until mixture begins to hold its shape. Turn into a 2-quart mold. Chill until firm.
4. Unmold onto a chilled serving plate.
