Apricots With Cinnamon And Orange

Ingredients
  Dried apricots package 8 Ounce (1 Package)
  Cinnamon stick 1 (About 2 1/2 Inches)
  Orange rind 1 Teaspoon, grated
  Sugar 6 Tablespoon
  Water 1 Cup (16 tbs)
  Vanilla extract 1⁄2 Teaspoon
Directions

1 In a medium-size saucepan, combine the apricots, cinnamon stick, orange rind, and sugar. Add just enough waterto coverthe apricots. Bringto a boil over moderate heat, then lowerthe heatand simmer, uncovered, for 12 to 12 minutes oruntil tender. Let cool fora few minutes, then stir in the vanilla. Let cool completely, then transferthe apricots and liquid to a bowl; refrigerate, covered, for up to a week.
