|Dried apricots||1 1⁄2 Cup (24 tbs)|
|Unsweetened apple juice||2 Cup (32 tbs)|
|Water||2 Cup (32 tbs)|
|Grated lemon peel||1 1⁄2 Teaspoon|
Combine apricots, apple juice, and water in a 2-quart saucepan.
Allow to stand several hours or overnight.
Place over very low heat and cook, covered, until tender (20 to 25 minutes).
Place mixture in a blender and puree.
Add honey and lemon peel.
Mix well until honey is completely dissolved.
Pour into individual dessert dishes and refrigerate at least 4 hours before serving.
