Apricot Pineapple Dessert Topping
|Dried apricot||1⁄2 Cup (8 tbs)|
|Water||1 1⁄2 Cup (24 tbs)|
|Honey||1⁄2 Cup (8 tbs)|
|Lemon juice||2 Tablespoon|
|Grated lemon rind||1 Teaspoon|
|Pineapple||1⁄2 Cup (8 tbs), minced|
Place the apricot halves, water, honey, lemon juice, and lemon rind in a small saucepan.
Bring to a boil, reduce heat, cover, and simmer for 20 minutes.
Place the apricot mixture in a blender or food processor fitted with the steel blade.
On medium speed with the blender, or with several short bursts in the processor, blend the ingredients until smooth.
Return the apricot mixture to the saucepan.
Stir in the pineapple.
Place in a serving bowl and chill, if desired.
Keep unused portion refrigerated, tightly covered.
