Apricot And Honey Dessert
|Liquid honey||1 1⁄2 Tablespoon|
|Gelatin crystals||1⁄4 Ounce (7 Gram)|
|Cold water||2 Tablespoon|
|Dried apricots||4 Ounce (100 Gram)|
|Lemon||1⁄4 , juiced|
Soak the apricots overnight in plenty of cold water.
The following day cook in a saucepan with enough water to cover.
Bring to the boil and then simmer gently for 30 minutes or until the fruit is soft enough to puree.
Put the gelatine and water into a small basin over a pan of simmering water.
Stir until dissolved and then mix in well with the apricots.
Put the apricots, lemon juice and rind into the blender with the honey.
Spoon into 3 glass dishes and leave to cool.
Chill in the fridge until set.
