Ingredients
  Whole wheat flour 1 Cup (16 tbs)
  Sugar 2 Teaspoon
  Baking powder 1⁄2 Teaspoon
  Baking soda 1⁄2 Teaspoon
  Ground ginger 3⁄4 Teaspoon
  Low fat buttermilk 1 1⁄2 Cup (24 tbs)
  Unsweetened applesauce 1⁄2 Cup (8 tbs)
  Vegetable oil 2 Tablespoon
  Egg 1
  Vegetable cooking spray 1
Directions

Combine flour, sugar, baking powder, soda, and ginger in a medium bowl, stirring well; set aside.
Combine buttermilk, applesauce, oil, and egg yolk in a small bowl; mix well, and gradually add to dry ingredients, stirring until smooth.
Beat egg white (at room temperarure) in a small bowl until stiff peaks form; gently fold into barren, coat a waffle iron with cooking spray; allow waffle iron to preheat.
Pour 1 1/4 cups barter onto hot waffle iron, spreading batter to edges.
Bake 5 minutes or until steaming stops.
Repeat procedure until all batter is used.
