Latkes And Applesauce

Ingredients
  Russet potatoes 1 Pound
  Sweet potatoes 1 Pound
  Yellow onion 1 Large
  Eggs 2
  Salt 1 Pinch
  Flour 1 Pinch
  Canola oil/Peanut oil 5 Tablespoon
Directions

Grate potatoes and onions with a cheese grater. Keep potatoes in water so they don't turn brown. Strain potatoes and onions well. If still damp, place on a paper towel and roll it up to bring out the moisture. In a large bowl, beat two eggs and add potatoes with a pinch of salt and mix well.

In a large pan, heat 1/4 inch canola or peanut oil over medium high heat. Place latkes in with a large spoon and press down with a fork. Let fry on either side for 2 minutes. Transfer to a cooling rack with paper towels under them and top with salt. Serve with applesauce and sour cream.
