Applesauce Pudding

Applesauce pudding is yet another delicious way of presenting the apple. A slight twist and what you have is an absolutely mouthwatering delight. Enjoy!!
Ingredients
  Applesauce 3 Cup (48 tbs), sweetened
  Eggs 3 Small, separated
  Lemon rind 1 Teaspoon, grated
  Vanilla 1 1⁄2 Teaspoon
  Lemon juice 2 Teaspoon
  Sugar 6 Tablespoon
  Salt 1⁄8 Teaspoon
Directions

MAKING
1) In a bowl, add the applesauce.
2) Add in the egg yolks, lemon rind, 1/2 teaspoon vanilla and lemon juice. Mix well.
3) In a bowl, add the egg whites and beat till soft peaks.
4) While beating, slowly add in the sugar, and continue beating till stiff.
5) Add in the salt and remaining vanilla.
6) Transfer the applesauce mix to a baking dish.
7) Spread meringue over the top.
8) Stand a baking dish in a pan of hot water.
9) Place in the oven and bake at 300 degrees for 15 minutes.

SERVING
10) Serve hot or cold.
11) To serve cold, garnish with cream.
