Ingredients
  Unsweetened applesauce 1 Cup (16 tbs)
  Low fat small curd cottage cheese 1 Cup (16 tbs)
  Orange segments 1 Cup (16 tbs) (Fresh)
  Toasted shredded coconut 1⁄4 Cup (4 tbs)
Directions

1. In medium bowl, beat together applesauce and cottage cheese. Fold in orange segments.
2. Divide mixture among 4 parfait glasses. Chill until serving time. Sprinkle each with 1 tablespoon toasted coconut.
