Baked Squash With Applesauce
|Acorn squash||4 Medium|
|Bulk pork sausage||1 Pound|
|Ground cinnamon||1 Teaspoon|
|Canned applesauce||16 Ounce (1 Can)|
Scrub squash; cut in half lengthwise; remove seeds and stringy fiber.
Place cut-side down on a baking sheet.
Bake at 350° about 40 minutes, or until almost tender.
Form sausage into 24 small balls; brown in skillet.
Combine cinnamon and applesauce.
Turn squash cut-side up; salt cavity and fill with applesauce mixture.
Place 3 sausage balls on top of applesauce.
Return to oven for 20 minutes.
