Applesauce Snacking Cake
|Sweetened applesauce||1 1⁄4 Cup (20 tbs)|
|100% bran||1 Cup (16 tbs) (Nabisco Brand)|
|99% real egg product||1⁄2 Cup (8 tbs) (Egg Beaters Brand)|
|Light molasses||1⁄2 Cup (8 tbs), brere rabbit brand|
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Baking soda||1 Teaspoon|
|Ground cinnamon||1 Teaspoon|
|Firmly packed brown sugar||1 Cup (16 tbs)|
|Margarine||1⁄2 Cup (8 tbs), softened (Fleischmann's Brand)|
|Raisins||1⁄2 Cup (8 tbs)|
In medium bowl, mix applesauce, bran, Egg Beaters® and molasses; let stand 5 minutes.
In small bowl, blend flour, baking soda and cinnamon; set aside.
In large bowl, with electric mixer at medium speed, beat sugar and margarine until creamy.
Beat in bran mixture until smooth.
Blend in flour mixture; stir in raisins.
Spread batter evenly in ungreased 15 x10 x1 inch baking pan.
Bake at 350°F for 20 to 25 minutes or until wooden toothpick inserted in center comes out clean.
Cool in pan on wire rack.
Sprinkle with confectioner's sugar if desired; cut into 48 bars.
