Lambs Kidneys With Apples

Ingredients
  Onion 7 Large, coarsely chopped
  Butter 1 Tablespoon
  Golden delicious apples 2 , thinly sliced
  Curry powder 2 Teaspoon
  Lamb kidney 6
  All purpose flour 2 Tablespoon (Plain)
  Salt To Taste
  Pepper To Taste
  Vinegar 1 Teaspoon
  Sour cream 3 Tablespoon (Crme Fraiche)
  Chopped parsley 2 Tablespoon
Directions

Puree the onion in a food processor.
Put in a small casserole with the butter.
Cover and microwave on HIGH for 2 minutes.
Add the apples to the onions with the curry powder.
Mix well.
Cover and microwave on HIGH for 3 minutes.
Remove the membrane surrounding the kidneys and cut in half.
Remove the white tendons.
Cut the half kidneys in 3 pieces.
Season the flour with salt and pepper, then roll the kidneys in the mixture.
Mash the apple mixture with a fork.
Add salt to taste.
Put the kidney pieces on top.
Cover and microwave on HIGH for 2 minutes.
Add the vinegar and sour cream (creme fraiche) to the casserole.
Mix well.
Cover and microwave on HIGH for 1 minute.
Sprinkle with chopped parsley
