Apple Lime Crunch
|Cooking apples||450 Gram, peeled cored and sliced (1 Pound)|
|Lime juice||2 Tablespoon, freshly squeezed|
|Artificial sweetener||To Taste|
|Egg||1 , separated|
|Muesli||4 Tablespoon (Lightly Toasted)|
|Lime curd/Lime marmalade||4 Teaspoon|
|Thin lime slices||4 (To Decorate)|
1. Put the apples into a pan with the lime juice and water; cover and simmer gently until the apples are soft and pulpy. Add artificial sweetener to taste. Chill.
2. Beat the egg yolk into the cooked apple; whisk the egg white until stiff but not dry, and fold lightly but thoroughly into the apple mixture.
3. Put half the apple mixture into 4 tall glasses, and sprinkle the toasted muesli over the top. Add a spoonful of lime curd or lime marmalade and top up with the remaining apple mixture.
4. Decorate each one with a twisted lime slice, and serve immediately.
