Glazed Apples

  Red cooking apples 8 Medium
  Light brown sugar 1⁄4 Cup (4 tbs)
  Light corn syrup 1⁄4 Cup (4 tbs)
  Lemon juice 1 Tablespoon

Core but do not peel apples; cut into 1/2-inch thick rings. Or cut in half, then into 1/2-inch wedges. Melt 1/4 cup butter in frying pan. Add apples, one-third at a time, and cook about 2 minutes or until just tender, turning once with pancake turner. Remove apples to platter. In same pan over medium heat, melt 1/4 cup more butter; add brown sugar, corn syrup, and lemon juice. Cook, stirring until brown sugar is dissolved and mixture is slightly thickened. Return apples to frying pan with rubber spatula; stir gently to coat apples well with brown-sugar mixture.
