Baked Apples And Cherries
|Cooking apples||4 Large|
|Dark brown sugar||5 Tablespoon|
|Lemon||1 , grated rind and juiced|
|Candied cherries||1 Cup (16 tbs)|
1 Thoroghly wash the apples and remove the cores using an apple corer or a sharp knife.
2 Around the middle of each apple make a cut in the skin.
3 Preheat the oven at 350 degrees farenheit.
4 In a baking dish arrange all the apples.
5 Fill the cavity of each apple with a small peice of butter and a teaspoon of sugar.
6 Place the dish in the centre of a preheated oven and bake at 350 degrees farenheit for about 30 minutes. Baste occasionally with the apple juice in the dish.
7 In the meanwhile great the lemon rind and extract the juice.
8 In a saucepan melt the remainig butter and sugar cook until sugar dissolves. Boil gently to a rich caramel colour.
9 Add in lemon rind ,lemon juice,cherries and brandy to the pan and blend using a wooden spoon and loosen the caramel to combine with the mixture.
10 Simmer for 1-2 minutes and pour over the baked apples.
11 Serve Hot
