Apple Stuffed Squash

Ingredients
  Acorn squash 2 , halved (seeded)
  Melted butter/Margarine 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Ground cinnamon 1⁄4 Teaspoon
  Cooked white rice/Brown rice 2 Cup (32 tbs) (cooked in chicken broth)
  Unsweetened applesauce 1 Cup (16 tbs)
  Chopped celery 1⁄2 Cup (8 tbs)
  Chopped toasted pecans 1⁄2 Cup (8 tbs)
  Firmly packed brown sugar 1⁄4 Cup (4 tbs)
  Onion powder 1⁄2 Teaspoon
  Ground ginger 1⁄2 Teaspoon
  Apple wedges 4 Small (with peel)
Directions

Place squash cut-side down in shallow baking pan. Bake at 350 degrees 30 minutes. Turn squash cut-side up; brush with butter. Sprinkle with salt and cinnamon. Combine rice, applesauce, celery, pecans, brown sugar, onion powder and ginger. Fill squash evenly with rice stuffing. Bake, uncovered, 20 to 30 minutes. Garnish with apple wedges.
