Apple Dessert Crowns
|Seedless orange||1 Large, sectioned|
|Seedless raisins||1⁄4 Cup (4 tbs)|
|Lemon juice||1 Tablespoon|
|Iceberg lettuce wedges||4|
|Sour cream/Yogurt||1 Tablespoon|
Wash, core, but do not pare apples.
Cut 1/2-inch slice from top of each; also cut slice from bottom so apple stands upright.
With melon bailer, scoop balls from top slices and insides of apples, leaving 1/8-inch shells.
Toss balls with orange sections, raisins; cover; refrigerate.
Cut sawtooth edge around top of each apple; also, for easy eating, make slits from bottom of each V nearly to base.
Brush inside shell and edge generously with lemon juice.
Fill shells with fruit mixture.
Garnish with walnuts, lettuce and cheese.
Serve with sour cream or yogurt.
