Apple Matzo Kugel

Ingredients
  Matzo boards 2 , broken
  Eggs 4 Medium, separated
  Apples 3 Medium, pared, cored, and grated
  Orange juice 1⁄2 Cup (8 tbs)
  Lemon juice 1 Teaspoon
  Lemon rind 1 Teaspoon, grated
  Salt 1⁄2 Teaspoon
  Cinnamon 1⁄4 Teaspoon
Directions

In small bowl soak matzo in water until soft; drain in colander and squeeze dry.
Transfer to medium bowl; add egg yolks, one at a time, mixing well after each addition.
In a separate bowl combine grated apples, fruit juices, lemon rind, sweetener, and seasonings; add to matzo mixture and stir well.
Beat egg whites, in a small bowl, until stiff but not dry; fold into matzo mixture.
Place in a 1 1/2-quart casserole and bake at 350°F.
for about 1 hour or until top is browned.
Divide evenly.
