Delicious Apple Snow
|Tart apples||4 Medium (Greening / Other Variety)|
|Water||1⁄4 Cup (4 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Lemon juice||1 Tablespoon|
|Custard sauce||1⁄4 Cup (4 tbs) (Adjust Quantity As Needed)|
Pare, core, and slice apples into saucepan; add water, cover tightly, and cook slowly until mushy.
Shake pan occasionally to prevent sticking.
Mash and whip until smooth and fluffy; there should be 1 cup stiff sauce.
Remove from heat.
Beat egg whites until fluffy, and gradually beat in the sugar and lemon juice until very stiff and smooth.
Fold into the hot apple sauce until thoroughly blended.
Serve chilled with Custard Sauce and a spoonful of red jelly on top.
OR turn into the greased top of a double boiler.
Cover and cook over simmering water for 25 to 30 minutes.
Serve warm with Custard Sauce made from remaining egg yolks.
