Lambs Hearts With Celery And Apple

Ingredients
  Lamb heart 1 Pound, washed and thinly sliced
  Onion 1 Large, peeled and sliced
  Lard 2 Ounce
  Celery stick 6 , washed and sliced
  Butter 1⁄2 Ounce
  Cornflour 1⁄2 Ounce
  Stock 1⁄2 Pint
  Tomato puree 1 Tablespoon
  Red wine 4 Tablespoon
  Bouquet garni 1
  Salt To Taste
  Freshly ground black pepper To Taste
  Red skinned apples 8 Ounce, washed, cored and sliced
Directions

Brown the heart slices and onion in the lard.
Remove from the fat.
Place in casserole.
Using a clean pan saute the celery in butter.
Place in casserole.
Blend the cornflour with 4 tablespoons of cold stock.
Slowly stir into the butter to make a roux.
Blend in the remaining stock, puree and red wine and cook well.
Add to the casserole with the bouquet garni and seasoning.
Arrange sliced apples on top.
Cover and cook for 2 hours.
Remove bouquet garni.
Taste and adjust the seasoning before serving.
