Creamed Glazed Apple and Pork Saute
|Diced onion||1⁄4 Cup (4 tbs)|
|Apple||1 Small, cored, pared, and cut into 1/4-inch-thick slices|
|Granulated brown sugar||1 Teaspoon|
|All purpose flour||2 Teaspoon|
|Unsweetened apple juice||1⁄3 Cup (5.33 tbs)|
|Dry sherry||1⁄4 Cup (4 tbs)|
|Boneless cooked pork||8 Ounce, cut into strips|
|White pepper||1⁄8 Teaspoon|
|Plain low fat yogurt||1⁄4 Cup (4 tbs)|
In 9- or 10-inch nonstick skillet heat margarine until bubbly and hot; add onion and saute until translucent.
Add apple slices and brown sugar and stir to combine; sprinkle with flour and stir quickly to combine.
Cook, stirring constantly, for 2 minutes; gradually stir in apple juice.
Add sherry and bring to a boil.
Add pork, salt, and pepper and cook over medium heat, stirring constantly, until mixture thickens.
Stir in yogurt and heat thoroughly (do not boil).
