Buttercup Squash With Apples
|Buttercup squash||1⁄2 Pound (Small Squash)|
|Chopped tart apple||1⁄2 Cup (8 tbs)|
|Packed brown sugar||2 Teaspoon|
|Margarine/Butter||2 Teaspoon, softened|
|Lemon juice||1⁄2 Teaspoon|
|Ground nutmeg||1 Dash|
Remove seeds and fibers from squash; cut in half.
Place squash, cut sides up, in 9 X 1 1/4-inch pie plate.
Mix remaining ingredients; spoon into squash pieces.
Cover with waxed paper and microwave on high (100%) 2 minutes; rotate pie plate 1/2 turn.
Microwave until tender, 2 to 3 minutes longer.
Spoon juices over squash.
