Baked Apples With Cinnamon Ice Cream
|Low fat vanilla ice cream||1 1⁄2 Cup (24 tbs), softened|
|Ground cinnamon||1⁄2 Teaspoon|
|Rome apples||6 Small|
|Brown sugar||6 Tablespoon|
|Reduced calorie stick margarine||1⁄4 Cup (4 tbs)|
1. Combine softened ice cream and 1/2 teaspoon cinnamon in a 9-inch square baking pan; stir well. Spread evenly in pan; cover and freeze 2 hours or until firm.

Place apples in an 11- x 7-inch baking dish; cover with heavy-duty plastic wrap, and vent. Microwave at HIGH 10 minutes or until apples are tender, turning dish a half-rurn after 5 minutes.
3. Place apples in individual serving dishes; drizzle cooking liquid in baking dish evenly over apples. Top each apple with 1/4 cup ice cream mixture. Sprinkle with cinnamon, if desired.
