Apple, Walnut, And Cheddar Soup

Ingredients
  Sweet margarine 1 Teaspoon
  Granny smith apples 1⁄2 Pound, cored, pared, and chopped
  Chopped onion 1⁄2 Cup (8 tbs)
  Shelled walnuts 1⁄2 Ounce
  Canned low sodium chicken broth 1 Cup (16 tbs) (Ready To Serve Type)
  Reduced fat cheddar cheese 3⁄4 Ounce, shredded
Directions

1. In 1 1/2-quart nonstick saucepan melt margarine; add apples, onion, and walnuts. Cover and cook over medium heat, stirring occasionally, until apples are soft, about 10 minutes. Let cool slightly.
2. Transfer mixture to blender; add broth and process until smooth. Return to saucepan; stir in cheese and cook over low heat, stirring constantly, until cheese melts, about 2 minutes.
