Apple, Walnut, And Cheddar Soup
|Sweet margarine||1 Teaspoon|
|Granny smith apples||1⁄2 Pound, cored, pared, and chopped|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Shelled walnuts||1⁄2 Ounce|
|Canned low sodium chicken broth||1 Cup (16 tbs) (Ready To Serve Type)|
|Reduced fat cheddar cheese||3⁄4 Ounce, shredded|
1. In 1 1/2-quart nonstick saucepan melt margarine; add apples, onion, and walnuts. Cover and cook over medium heat, stirring occasionally, until apples are soft, about 10 minutes. Let cool slightly.
2. Transfer mixture to blender; add broth and process until smooth. Return to saucepan; stir in cheese and cook over low heat, stirring constantly, until cheese melts, about 2 minutes.
