Spiced Bulgur With Apple
1 medium-size onion, chopped
1 clove garlic, pressed or minced
2 teaspoons minced fresh ginger
1 cup bulgur (cracked wheat)
1/2 teaspoon ground cinnamon
1 1/2 cups regular-strength chicken broth
1 small red apple
1/2 cup golden raisins
1/2 cup chopped salted roasted pistachios
In a 3- to 4-quart pan, combine oil, onion, garlic, and ginger.
Cook over medium heat, stirring often, until onion is limp, about 5 minutes.
Add bulgur; cook, stirring, until lightly toasted, about 3 minutes.
Stir in cinnamon and broth; bring to a boil on high heat.
Reduce heat, cover, and simmer until the bulgur is tender to bite, about 10 minutes.
Meanwhile, core and finely dice apple; stir with raisins into pilaf.
Add salt to taste.
Spoon into a bowl.
Garnish with pistachios.
