Flaming Sherried Eggs With Shrimp Apple And Spinach
|Heavy cream||1⁄4 Cup (4 tbs)|
|Cilantro||1 Tablespoon, finely chopped|
|Clarified butter||2 Tablespoon|
|Granny smith apple||1⁄2 , unpeeled and diced|
|Chopped shrimp||1⁄4 Cup (4 tbs)|
|Minced chives||2 Tablespoon|
|Spinach||1⁄4 Cup (4 tbs), shredded|
|Blue cheese||1⁄4 Cup (4 tbs), crumbled|
In a large bowl beat the eggs with the cream, cilantro, salt, and pepper until well mixed.
Set the mixture aside.
In a medium skillet heat the butter and saute the apples, shrimp and chives for 1 minute.
Add the spinach.
Pour the sherry into the skillet and flambe.
Add the eggs, turning frequently until the eggs begin to harden.
Add the cheese, folding it into the eggs.
