Apple And Blackberry Comp Ote
|Eating apples||2 1⁄2 Pound, peeled, cored and thinly sliced|
|Lemon rind||1⁄2 Tablespoon|
Poach the apple slices in the water with the lemon rind until transparent - about 7 minutes. Drain the apples and set aside to cool. Add the sugar to the cooking liquid. When dissolved, bring to the boil and continue boiling for 8 to 10 minutes or until reduced by half. Discard the lemon rind and pour this syrup over the apples.
Place half the apples in six individual dishes. Cover with half the blackberries. Add the Calvados or brandy to the remaining syrup and spoon it over the fruit. Fill up with layers of the remaining apples and blackberries. Chill well before serving with thick pouring cream.
