Baked Apple Pudding With Rum

Ingredients
For pudding
  Sifted flour 1 Cup (16 tbs)
  Baking soda 1 Teaspoon
  Cinnamon 1 Teaspoon
  Nutmeg 3⁄4 Teaspoon
  Salt 1⁄4 Teaspoon
  Butter 3⁄4 Cup (12 tbs)
  Sugar 1 Cup (16 tbs)
  Egg 1 , unbeaten
  Apples 3 Medium, washed
For sauce
  Butter 1⁄2 Cup (8 tbs)
  Light cream 1⁄2 Cup (8 tbs)
  Nutmeg 1 Dash
  Vanilla 1 Teaspoon
  Rum extract/3 tablespoon rum 1 Teaspoon
Directions

Heat oven to 400 degrees.
Grease an 8x8" pan.
Sift first 5 ingredients.
With mixer at cream, mix butter with sugar and egg until light and fluffy.
Grate apples, medium fine.
Measure 2 Cups.
Add to egg mixture.
At low speed, beat in flour mixture, just until mixed.
Pour into pan.
Bake 20 to 30 min.
Cool; store in pan.
Cut into 8 squares.
Rum Butter Sauce: In double boiler, mix butter with sugar and cream.
Cook, stirring 10 to 15 min., or until slightly thickened.
Add nutmeg, vanilla and rum extract. Pour sauce over pudding.
