Spiced Apple Nuggets
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Baking powder||2 Teaspoon|
|Ground cinnamon||1⁄2 Teaspoon|
|Ground nutmeg||1⁄4 Teaspoon|
|Egg||1 , beaten|
|Cooking oil||1⁄3 Cup (5.33 tbs)|
|Milk||1⁄4 Cup (4 tbs)|
|Apple||1 Medium, peeled, finely chopped|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Ground nutmeg||1⁄2 Teaspoon|
|Butter||1⁄4 Cup (4 tbs), melted|
In large bowl stir together flour, 1/2 cup sugar, baking powder, salt, 1/2 teaspoon cinnamon, and 1/4 teaspoon nutmeg.
Make a well in center.
In small bowl combine egg, oil, and milk.
Add egg mixture all at once to flour mixture.
Stir just till moistened; batter should be lumpy.
Gently stir in apple.
Fill greased or paper bake cup-lined 1 3/4- or 2 1/2-inch muffin cups 2/3 full.
Bake in 375° oven about 15 minutes for 1 2/3-inch muffins or about 20 minutes for 2 1/2-inch muffins or till golden brown.
Remove from muffin pans.
In small bowl combine 1/3 cup sugar, 1/2 teaspoon cinnamon, and 1/2 teaspoon nutmeg.
Dip hot muffin tops in melted butter, then in sugar-spice mixture.
