Oaty Apple Pikelets

Ingredients
  Buttermilk 8 Fluid Ounce (250 Milliliter)
  Oat bran 2 Ounce (50 Gram)
  Plain flour 2 Ounce (50 Gram)
  Soft light brown sugar 1 Tablespoon
  Egg 1
  Dessert apple 1 , peeled, cored and finely chopped
  Unsalted butter 1 Ounce (25 Gram)
Directions

1. In a large bowl, mix together the buttermilk, oat bran, flour, sugar and egg Stir in the chopped apple.
2. Heat a heavy-based pan over a low steady heat. Take the butter in a piece of kitchen towel and wipe a smear around the pan - if it sizzles gently when it hits the pan then the pan is at the perfect temperature.
3. Drop dessert spoonfuls of the mixture into the pan, spaced apart, and cook gently for 10 minutes, turning once. Repeat with the remaining mixture in 2 more batches. Set aside to cool.
4. Separate with pieces of nonstick baking paper, and store for up to 3 days in an airtight container in the refrigerator or up to 1 month in the freezer.
