Apple & Herb Roasted Turkey's picture
  Minced fresh sage 1⁄4 Cup (4 tbs)
  Minced fresh rosemary 1⁄4 Cup (4 tbs)
  Turkey 1
  Apple 1 Medium, quartered
  Onion 1 Medium, halved
  Celery rib 1 , halved
  Butter 1⁄2 Cup (8 tbs), melted
  Apple jelly 1⁄2 Cup (8 tbs), warmed

Combine the sage and rosemary.
With fingers, carefully loosen the skin from the turkey breast; rub herbs under the skin.
Secure the skin to underside of turkey breast with toothpicks.
Place breast side up on a rack in a roasting pan.
Stuff the turkey with the apple, onion and celery.
Brush with the butter.
Bake, uncovered, at 3250 for 3 to 3-1/2 hours or until a meat thermometer reads 1800, basting occasionally with the pan drippings.
Brush with apple jelly.
Cover and let stand for 15 minutes before removing the toothpicks and carving.
