Place apple slices in a large bowl; add lemon juice, tossing well.
Combine water, sugar, cloves, and cinnamon stick in a large nonstick skillet; bring to a boil.
Reduce heat, and simmer, uncovered, until mixture is reduced to 1/3 cup.
Remove and discard spices.
