Triple Apple Dessert

Ingredients
  Unflavored gelatin 1 Tablespoon (1 Envelope)
  Sugar 1 Tablespoon
  Unsweetened apple juice 1 Cup (16 tbs)
  Unsweetened applesauce 1 Cup (16 tbs)
  Finely diced apples 1 Cup (16 tbs)
  Almond extract 1⁄4 Teaspoon
  Apple slices 8
  Mint sprigs 4
Directions

1. Sprinkle gelatin and sugar over 54 cup of the apple juice in small saucepan; let stand for 5 minutes to soften. Place over very low heat just until gelatin is dissolved.
2. Stir in remaining 3/4 cup apple juice, the applesauce, diced apple and almond extract. Pour into 3-cup mold. Chill until set, about 1 to 1 1/2 hours.
3. Dip mold into hot water and invert onto serving platter; shake to release mold. Decorate with fresh unpeeled apple slices and mint sprigs.
