Baked Apples Stuffed With Currants

Ingredients
  Granny smith apples 4 Small (cored)
  Currants 1⁄4 Cup (4 tbs) (dried)
  Coconut 1 Tablespoon
  Walnuts 1 Tablespoon, chopped (toasted)
  Cinnamon 1⁄2 Teaspoon, ground
  Honey 2 Teaspoon
Directions

Place each apple in a custard cup, then place the cups in an 8" X 8" baking pan.
In a small bowl, combine the currants, coconut, walnuts and cinnamon.
Stir in the honey until well combined.
Spoon evenly into the center of each apple.
Cover the pan with foil and bake at 350° for 20 to 25 minutes or until the apples are just tender when pierced with a fork.
Let cool for 10 minutes
