Apple Oat Crisp

Ingredients
  Apples 6 Medium, washed, cored, and thinly sliced (Red Delicious, Cortland, Or Rome)
  Dark brown sugar 1 Cup (16 tbs) (3/4 Cup Plus 2 Tablespoon)
  Ground cinnamon 1⁄2 Teaspoon
  Stone ground cornmeal 1⁄2 Cup (8 tbs)
  Rolled oats 3⁄4 Cup (12 tbs)
  Peanut oil 1⁄2 Cup (8 tbs)
Directions

1. Preheat the oven to 300 degrees.
2. Oil a large heavy iron skillet. Place the unpeeled apple slices in the skillet and sprinkle with 2 tablespoons of the sugar and the cinnamon.
3. In a bowl, combine the corn-meal, oats, and the remaining sugar. Pour in the oil and work with the fingers through the dry mixture. Mixture will be crumbly. Sprinkle over apples. Bake for 40 minutes, or until the topping is brown. Do not overcook.
