Winter Squash With Apples
|Butternut squash/Banana squash||1 Pound, peeled and cut into 1 inch cubes|
|Water||1⁄4 Cup (4 tbs)|
|Tart apple||1 Large, cored, peeled and cut into 1/2 inch cubes|
|Lemon juice||2 Teaspoon|
|Firmly packed brown sugar||1⁄4 Cup (4 tbs)|
|Ground cinnamon||1⁄4 Teaspoon|
|Ground nutmeg||1⁄8 Teaspoon|
Melt butter in a wide frying pan over medium-high heat.
Add squash, water, apple, and lemon juice.
Cover and cook, stirring occasionally, until squash is just tender and liquid is absorbed (4 to 5 minutes).
Stir in brown sugar, cinnamon, nutmeg, and salt to taste.
Heat for 1 minute to melt brown sugar.
