Yams With Apples And Currants
|Yams/2 cans 1 pound each yams, drained||4 Medium, cooked, peeled, and sliced|
|Dark corn syrup||1⁄4 Cup (4 tbs)|
|Dried currants||2 Tablespoon|
|Lemon juice||1 Tablespoon|
|Tart apple||1 Large, peeled and thinly sliced|
|Blanched almonds||2 Tablespoon|
Arrange yams in buttered shallow casserole.
Combine remaining ingredients and cook over medium heat until apple slices are just tender.
Pour over yams in casserole.
Cover and bake in a 350° F.oven for 15 minutes or until bubbly.
This casserole can be prepared in advance, refrigerated and baked at serving time.
Add 15 minutes to cooking time.
