Microwave Baked Apples With Rum Raisin Sauce
|Rome beauty apples||32 Ounce (4 In Number, 7-8 Ounce Each)|
|Spiced lemon baste||2 Tablespoon|
|Raisins||1⁄2 Cup (8 tbs)|
|Light rum||3 Tablespoon|
|Butter/Margarine||3⁄4 Cup (12 tbs)|
|Sugar||3⁄4 Cup (12 tbs)|
|Half and half||1⁄3 Cup (5.33 tbs)|
|Egg||1 , beaten|
|Ground cinnamon||3⁄4 Teaspoon|
|Grated lemon peel||3⁄4 Teaspoon|
Core apples; peel skin from top third of each apple.
Place apples in microwave-safe baking dish or custard cups.
Pour Spiced Lemon Baste over apples.
Cover with vented plastic wrap.
Microwave at HIGH (100% power) 7 to 10 minutes or until apples are tender yet firm, rotating dish 1/4 turn and basting apples after 4 minutes.
Let stand while preparing sauce.
Microwave raisins and rum, covered, in microwave-safe container at HIGH 1 minute; set aside.
Combine butter and sugar in microwave-safe container; microwave at HIGH 1 1/2 minutes or until butter melts.
Stir in half-and-half; microwave at HIGH 2 minutes or until just boiling.
Stir small amount of hot sugar mixture into egg; return to remaining hot sugar mixture.
Microwave at MEDIUM (50% power) 2 1/2 to 3 minutes or until thickened, stirring after every minute.
Stir in raisin mixture, cinnamon and lemon peel.
Spoon over apples.
