1. Pare and core the apples and place in a greased ovenproof dish.
2. Grate the almond paste coarsely. Mix the almond paste with the egg white and lemon rind. Divide the mixture into four parts and shape each part into a round cake. Place a cake on each of the apples and press it down a little.
3. Brush with the egg yolk and sprinkle on the shredded almonds. Bake in a 400°F oven for 30 minutes or until the apples are soft and brown.
