Chewy Apple Moons
|Thawed frozen unsweetened apple juice concentrate||3⁄4 Cup (12 tbs)|
|Coarsely chopped dried apples||1⁄2 Cup (8 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs), melted and cooled|
|Vanilla extract||1 Teaspoon|
|All purpose flour||1 1⁄4 Cup (20 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Ground cinnamon||1⁄2 Teaspoon|
|Ground nutmeg||1⁄8 Teaspoon|
Preheat oven to 350°F.
Combine apple juice concentrate and apples; let stand 10 minutes.
Beat eggs in medium bowl.
Blend in concentrate mixture, butter and vanilla.
Add remaining ingredients; mix well.
Drop tablespoonfuls of dough 2 inches apart onto greased cookie sheet.
Bake 10 to 12 minutes or until firm and golden brown.
Cool on wire rack.
Store in airtight container.
