Baie Jolie Wild Duck With Apples
|Lard||1 1⁄2 Tablespoon|
|Apples||6 , pared, seeded and quartered|
|Salt pork slices||4|
|Sugar/Maple syrup||2 Tablespoon|
|Onion||1 Large, minced|
|Cider||1⁄4 Cup (4 tbs)|
Wash and dry ducks well.
Rub with lemon.
Season interior and exterior.
Put four apple quarters in each cavity with sugar or syrup.
Place lard and onions on bottom of clay baker.
Dot with seasoning.
Moisten with cider.
Close and bake.
