Baie Jolie Wild Duck With Apples

Ingredients
  Ducks 2
  Lard 1 1⁄2 Tablespoon
  Apples 6 , pared, seeded and quartered
  Lemon 1⁄2
  Salt pork slices 4
  Sugar/Maple syrup 2 Tablespoon
  Onion 1 Large, minced
  Cider 1⁄4 Cup (4 tbs)
Directions

Wash and dry ducks well.
Rub with lemon.
Season interior and exterior.
Put four apple quarters in each cavity with sugar or syrup.
Truss.
Place lard and onions on bottom of clay baker.
Add birds.
Dot with seasoning.
Moisten with cider.
Close and bake.
