Canadice is a popular seedless red grape varietal that is generally used as a table grape. This grape is large cylindrical shaped with a spicy flavor that is quite close to the Delaware grapes. It has many culinary uses in its fresh form and also as a wine, especially because of its strong fruity flavor; however, when ripe it has a slight tang with a delicate flavor.


Canadice is native to North America, where it was cultivated in New York, in the year 1977. It was created by crossing the Bath varietal with Himrod, another popular hybrid grape varietal from the New York State Agricultural Experiment Station. This grape, like its counterparts, was named after Canadice Lake, one of the lakes of Finger Lakes in the Geneva region.

Popular Canadice Recipes

There are many dishes that are flavored with the sweet canadice grapes. Detailed here are a couple of recipes –

  • Mini Galettes – These small pies are flavored with these grapes, which are used for making a filling. The seeds are removed from the grapes and the flesh is separated from the skin. The flesh is blended until smooth and thoroughly mixed with corn starch and sugar. Once the consistency of the grape mixture is thick, it is spooned into small pie crusts and baked until the grape mixture bubbles (which is an indication of the pies being done and ready to be served). The galettes are cooled before serving.
  • Canadice Grape Cobbler – Oats streusel is prepared by mixing rolled oats with brown sugar and a little flour to which margarine (shortening) is added and mixed well. Meanwhile, the grape mixture is prepared by cooking the pureed grape flesh along with a little flour, sugar and lemon juice (this adds a wonderful tartness to the cobbler. When the grape mixture thickens, it is poured into a greased pan and topped with the oats streusel. The cobbler is baked and served when it has cooled down.

Buying and Storage Tips

There are a few key points that need to be considered while buying Canadice grapes –

  • These grapes are susceptible to powdery mildew and also black rot. Hence, care should be taken to see that they are free of blemishes, spots or any kind of rot.
  • The skin of the grapes should be firm, crack free and without wrinkles or cuts.
  • Canadice grape, like all other grapes needs to be refrigerated without washing; else the moisture can spoil them. If washed, they need to be wiped clean and wrapped loosely in paper towels and refrigerated.
