|Milk||1 Cup (16 tbs)|
|Sifted flour||1 Cup (16 tbs)|
|Vegetable shortening||1 Tablespoon, melted|
Place eggs in mixer bowl; add milk, flour, and salt.
Beatl 1/2 minuteswith rotary beater or at medium speed of electric mixer.
Add melted vegetable shortening; beat 30 seconds more. (Don't overbeat.)
Fill 6 to 8 well greased custard cups 1/2 full.
Bake at 475° for 15 minutes.
Reduce oven to 350° and bake 25 to 30 minutes more or until browned and firm.
Before removing from oven, prick with fork to let steam escape.
For dry and crisp popovers, turn off oven and leave popovers in oven 30 minutes with door ajar.
