  Eggs 2
  Cinnamon 1 Teaspoon
  Sugar 1⁄2 Cup (8 tbs)
  Ginger 1⁄2 Teaspoon
  Salt 1⁄2 Teaspoon
  Butter 1 Tablespoon, melted
  Apples 1 1⁄2 Cup (24 tbs), diced
  Vanilla 1 Teaspoon
  All purpose flour 1 Cup (16 tbs)
  Baking soda 1⁄4 Teaspoon
  Baking powder 1 Teaspoon
  Vegetable oil 1 Tablespoon
  Confectioners sugar 1 Tablespoon

Beat the eggs, sugar, and salt until light and fluffy.
Add the apples.
Mix well.
Sift the flour, baking soda, and baking powder together.
Add to the egg mixture.
Add the cinnamon, ginger, butter, and vanilla.
Mix well.
Refrigerate the batter for at least 2 hours.
Drop by teaspoonfuls into deep hot fat (375° F.) and fry for 3 to 5 minutes.
Do not fry more than 4 or 5 fritters at a time.
Drain on paper towels.
Sprinkle with confectioners' sugar before serving.
